Ingredients:
- 2 medium zucchinis
- 24-30 cherry tomatoes (or grape tomatoes)
- 400g feta cheese, cut into 4cm cubes
- 1 cup fresh basil leaves
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 8-10 wooden or metal skewers
Instructions:
- Prepare the Vegetables:
- Wash and shave the zucchinis into very thin slices lengthways (can use a mandolin slicer)
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Season the Ingredients:
- In a bowl, toss the zucchini with 1 tablespoon of olive oil, dried oregano, salt, and black pepper.
- Toss the cherry tomatoes with the remaining 1 tablespoon of olive oil, salt, and pepper.
- Assemble the Skewers:
- Wrap each cube of feta with a basil leaf in a zucchini slice. Thread each skewer with 3 tomatoes and 3 wrapped feta cubes, alternating between each ingredient.
- Cook the Skewers:
- BBQ or Griddle Pan: Preheat your BBQ grill to medium-high heat. Grill the skewers for about 3-4 minutes per side, turning occasionally, until the zucchini is tender and has grill marks.
- Grilling: Preheat your grill. Place the skewers on a pan and grill for about 4-5 minutes per side, until the zucchini is tender and slightly charred.
- Air Frying: Preheat your air fryer to 200°C. Cook the skewers in the air fryer for 8-10 minutes, turning halfway through, until the zucchini is tender and slightly crispy.
- Serve:
- Transfer the skewers to a serving platter. Garnish with extra fresh basil leaves
- Serve warm or at room temperature.
Tips:
- For extra flavour, you can drizzle the skewers with a balsamic glaze or sprinkle with a bit of lemon juice before serving.
- If you prefer a different cheese, you can substitute the feta with goat cheese or a mild cheddar.
